Spanish Rice

Add cooked ground beef and/or reduce tomatoes to one can, if desired.

  • One head cabbage, sliced very thin.
  • Olive Oil
  • 2 c rice, brown or white
  • 1-3 onions, sliced very thin.
  • Handful currants (optional)
  • 2 large cans chopped or crushed tomatoes, drained well.
  • pepper
  • salt
  1. Saute cabbage in oil and/or butter 10 minutes.
  2. Add onions and rice. Saute another five minutes.
  3. Add 1.5 quarts hot water and some ground pepper. Simmer until done.
  4. Add drained tomatoes. Stir and taste for salt.
